肠膜状明串珠菌在其产生的右旋糖酐蔗糖酶的作用下,以蔗糖为原料转化合成右旋糖酐和产生果糖。着重进行了Mn2+对肠膜状明串珠菌Lm-1226发酵产右旋糖酐影响的初步探索。对Mn2+对肠膜状明串珠菌Lm-1226的生长,产果糖、右旋糖酐和右旋糖酐蔗糖酶,右旋糖酐蔗糖酶作用影响进行了研究。一定浓度的Mn2+对肠膜状明串珠菌Lm-1226的生长具有促进作用;Mn2+抑制肠膜状明串珠菌Lm-1226发酵产果糖和右旋糖酐,且Mn2+浓度越高,抑制性越强;Mn2+对肠膜状明串珠菌Lm-1226发酵产右旋糖酐蔗糖酶有抑制作用;Mn2+对右旋糖酐蔗糖酶具有较强的激活作用,激活作用可达158%,最适Mn2+浓度为5.0 mmol/L。 |

Affected by dextransucrase produced by Leuconstoc mesenteriodes inverted sucrose as raw material into dextran and produced fructose. This research focuses on the effect of Mn2+ on L. mesenteriodes and initial probe the effects on the fermentation and the production of dextran. And carry out the study on the effect of Mn2+ on L. mesenteriodes Lm-1226 growth, fructose, and dextran production, as well as the effect on dextransucrase reaction. A certain concentration of Mn2+ could enhance the growth of L. mesenteriodes Lm-1226: Mn2+ inhibited L. mesenteriodes Lm-1226 fermentation to produce fructose and dextran, and this inhibitory effect was stronger as Mn2+concentration higher. Mn2+ inhibited L. mesenteriodes Lm-1226 to produce dextransucrase. However, Mn2+ possessed fairly strong dextransucrase activation, and this activation effect could reach up to 158%. The optimal concentration of Mn2+ was at 5.0 mmol/L. |
