Foodborne pathogens widely exist and can cause human disease and even death. The study has found that more than half of food safety problems stem from the contamination of foodborne pathogens. Therefore, how to detect food-borne pathogens rapidly and effectively is a key link in the preventing and controlling food safety. This paper systematically reviewed the methods of detecting foodborne pathogens, including traditional methods such as traditional culture method, metabolic method, molecular biological method and immunological method, and the new mass spectrometry method. Since the mass spectrometry has the advantages of high detection efficiency, simple to operate, and high sensitivity, hence, this paper focuses on the principle, application and future development trend of mass spectrometry, hopefully to provide reference for the research and development and popularized the application of the technology. |
